Since we found out that we cannot eat 90% of the food at the grocery store, I have had to find creative ways to get my fixes or vises, whichever way the coin falls. One thing I missed was Pistachio Ice Cream, I'm a sucker for a good pistachio ice cream. This is the healthy alternative using yogurt you didn't know you needed. This can also be Keto. I eat 4-5 Creami containers of this a week.

Ingredients:
1/4 cup or more Pistachios (deshelled and unseasoned)
Yogurt
4T Milk
1-2T Pistachio Syrup
1-2T Pistachio Pudding (optional)
Prepping:
Fill the Creami container 1/2 to the fill line with yogurt. I make my own which has no sugar, its also much cheaper considering how much yogurt I go through, I use this recipe.

Add the Pistachios (no need to chop). I buy the deshelled, unseasoned ones from Whole Foods, these are the most inexpensive deshelled ones and the only ones I have found that doesn't have salt or any additives. Add 2 Tablespoons milk. This should still be below the fill line. I have found if you make it to the fill line, it's hard to add the syrup for the respin.

Optional Prep
1-2T Pistachio pudding can be added if you want to. I add it if I have it. If I'm trying to stick to Keto, I omit because there is no sugar free version. It adds a little more pistachio flavor and some green coloring but definitely not necessary.
Mix with a spoon, don't worry about getting it smooth. Freeze for at least 12 hours.
Creami Processing:
Pull from freezer, you can let this sit out for a few minutes, run under warm water or, if you are like me and have no patience process as soon as possible but first, add 2T milk and spin on Ice Cream.

It may be flaky, that's okay. Add 1-2T Pistachio Syrup. I use 1T if I add pistachio pudding, and 2T if I do not. I buy mine at Marshalls/ Homegoods/ TJ Maxx and always choose the sugar free kind, I have bought different brands, this brand is the one I am currently using. It costs anywhere from $4.99-$6.99 for 750ml. Spin on Respin. That's it. After I eat a few bites, I do mix it with my spoon and scrape the bottom and sides, the Creami is great but there are some blind spots of the blade.
I hope you enjoy as much as I do.
